Ingredients

130 ml Coconut milk 17-19% House of Asia

200 g light spelt flour

2 tablespoons of dark cocoa

1 tablespoon of good quality gingerbread spice

2 teaspoon baking powder

1/2 teaspoon of baking soda

grated peel from a whole orange 

30 g cane sugar

30 g liquid honey

100 ml rapeseed oil

2 eggs 

Additionally:

Condensed coconut milk 200 ml QF Quality Food 

Fresh cranberries for garnish

A method of preparing

1. Preheat the oven to 180 degrees.

2. Mix all the dry ingredients together, then add the wet ingredients. Mix thoroughly and pour into a baking dish, e.g., a loaf pan.

3. Bake for 35 minutes (until a stick comes out dry).

4. Let the baked cake cool, pour condensed milk over it and decorate with cranberries.
