Ribs in plum sauce
Chinese food isn't just about sweet and sour chicken. The menu also offers more sophisticated flavors.
Ingredients
- 1 kg of ribs, washed, dried,
- 1 bunch of spring onions, cut into pieces
- 10 gr Shiitake mushrooms; prepared according to the instructions on the packaging
- 4 cloves of garlic, thinly sliced
- 2 cm ginger root, thinly sliced
- 1 ½ teaspoons Sichuan peppercorns
- 200 ml of water
- 2 tablespoons of oil; for frying
Break
- 50 ml light soy sauce
- 70 ml dark soy sauce
- 180 ml plum sauce
- 60 ml garlic sauce with honey
Marinade
- 15 ml dark soy sauce
- 10 ml light soy sauce
- 2 cloves of garlic, finely chopped
A method of preparing
- Combine the marinade ingredients in a bowl. Add the ribs and set aside to marinate for 15 minutes.
- Pour oil into a very hot pan and fry the ribs until golden brown. Add the ginger, garlic, spring onion, mushrooms, and pepper and fry for 2 minutes.
- Mix the sauce ingredients in a bowl. Pour everything into the pan.
- Cover and simmer the ribs over medium heat for 8-10 minutes. Transfer everything to an ovenproof dish and add water.
- Preheat the oven to 150°C and bake the ribs for about 100 minutes (until the meat is tender).
