Sweet and sour chicken with pineapple
A quick and simple recipe combining the sweetness of pineapple with the pleasant spiciness of Sambal Oelek sauce, ready in just 15 minutes.
Ingredients
- 2 tablespoons light soy sauce
- 1 teaspoon Sambal Oelek sauce
- 1 tablespoon coconut or brown sugar
- 2 tablespoons rice vinegar
- 200 g chicken fillet, cut into 1,5 cm pieces
- ½ onion, diced
- ½ red pepper, diced
- 130 g (4 slices) canned pineapple, cut into pieces
- 1 cm freshly grated ginger
- 200 ml of water
- 2 teaspoons of potato flour
- 1 clove of garlic, finely chopped
- 2 tablespoons of oil, for frying
TIP: Rice vinegar can be replaced with regular vinegar.
A method of preparing
- Pour 1 tablespoon of soy sauce and 1 teaspoon of potato starch into a bowl. Add the chicken and mix thoroughly.
- Heat oil in a pan, add the chicken, and fry for about 2 minutes. Remove the chicken from the pan.
- In the same pan, add the remaining soy sauce, Sambal Oelek sauce, rice vinegar, and sugar. Mix well.
- Then add: garlic, ginger, onion, pepper and pineapple.
- In a bowl, mix water with 1 teaspoon of flour, making sure there are no lumps, and pour into the pan.
- Finally, add the chicken and fry everything together for about a minute.
