Even the simplest ingredients, beautifully presented, can be captivating. Colorful ingredients like pumpkin, cucumber, noodles, and tofu will look much better in a bowl when arranged individually. It's a simple trick, but it produces a huge effect.

Ingredients

  • 2 tablespoons miso paste
  • 1 pack mun mushrooms 
  • 1 package of chow mein noodles
  • 1 tablespoon sliced ​​garlic
  • 1 tablespoon finely chopped ginger
  • 200 g Hokkaido pumpkin, cut into 1 cm cubes
  • 200 g smoked tofu cut into 1 cm cubes
  • 1 green cucumber, thinly sliced
  • 1 tablespoon of vegetable oil for frying
  • 1 liter of water
  • salt and brown sugar to taste
  • spring onion to serve

A method of preparing

  1. Cook the pasta according to the package directions. Set aside to cool.
  2. Heat the oil in a pot over medium heat, sauté the garlic and ginger.
  3. Add pumpkin and tofu, fry for 2 minutes.
  4. Pour in water, add miso and mushrooms.
  5. Mix well, do not bring to a boil, cook over low heat for about 5 minutes.
