Fluffy bao buns with juicy duck breast

Ingredients
- 6 tablespoons Peking Duck Sauce from House of Asia
- 4 tablespoons Mung bean sprouts from House of Asia
- 100 ml Rice vinegar House of Asia
- 4 bao buns or dumplings
- 1 large duck breast
- 1/2 fresh chili, finely chopped
- 2 cloves of grated garlic
- 3 cm piece of grated ginger
- 1 tablespoon of oil
- 1/2 cucumber, sliced
- 1 carrot, sliced
- 100 ml of water
- 1 flat teaspoon of salt
- 2 tablespoons of sugar
- roasted sesame
- fresh coriander
A method of preparing
- In a bowl, combine 2 tablespoons of Peking Duck sauce, chili powder, garlic, ginger, and 1 tablespoon of oil. Gently score the duck breast on the skin side (this will make it easier to render the fat) and marinate for at least 2 hours, preferably overnight.
- Pour rice vinegar, water, sugar, and salt into a saucepan. Heat until the sugar dissolves, then remove from heat. Pour over the cucumber and carrots.
- Fry the duck breast in a gently heated pan, skin side down, slowly until most of the fat has rendered. This may take about 15 minutes. After that, raise the heat slightly and fry the skin side down for a few more minutes, then flip and fry for about 5-6 minutes. Then remove from the pan and let the meat rest for about 5 minutes.
- Steam the bao.
- Spread a spoonful of sauce on each bun, top with duck slices, cucumber and carrot slices, and mung beans. Sprinkle with sesame seeds and fresh cilantro.
