Roast turkey in red curry

Ingredients
- 2 tablespoons light soy sauce
- 400 ml coconut milk 5-7%
- 4 tsp red curry paste
- 3 tablespoons of coconut oil
- 1 kg turkey fillet, washed and dried
- ½ teaspoon of coriander seeds
- 1 teaspoon of black peppercorns
A method of preparing
- Grind the coriander and peppercorns in a mortar and pestle. Transfer them to a deep bowl.
- Pour the coconut milk into the bowl with the spices and mix everything together. Add the turkey fillet to the marinade and refrigerate for at least 1 hour.
- Heat coconut oil in a frying pan. Remove the turkey from the marinade, but do not discard it. Sear the fillet on all sides until golden brown. Remove from the pan and place in a roasting pan.
- Add the curry paste to the oil used to sear the meat. Cook over low heat until the paste's aroma is released. Pour in half of the marinade. Mix everything together and bring to a near boil. Remove from the heat and add the remaining marinade. Mix everything together and pour over the turkey fillet.
- Preheat the oven to 200°C. Place the turkey fillet in the oven and roast for 20 minutes. Then reduce the temperature to 160°C and roast for another 15 minutes, basting frequently with the marinade. Serve the roast sliced.
