Korean Bulgogi with Pulled Green Jackfruit
Bulgogi is a popular Korean dish. Its name means fire and meat. Traditionally made with thinly sliced, grilled beef, the recipe below Culinary practices you will find a vegan version, with green pulled jackfruit.
Ingredients
- 565 g of pulled green jackfruit
- 50 gr Bulgogi paste
- 100 gr jasmine rice
- 1 red onion, sliced into strips
- 1 medium carrot, sliced
- 150 g green beans
- 2 field cucumbers, cut into sticks
- 4 radishes, sliced
- 150 g sprout stir fry
- 2 tablespoons of kimchi
- 2 tablespoons of oil
- 2 tablespoons chopped chives

A method of preparing
- Prepare the rice according to the instructions on the package.
- Drain and rinse the jackfruit. Transfer to a bowl, add the bulgogi paste, and mix thoroughly. Marinate for at least 15 minutes.
- In a pot, bring water to a boil and cook the beans. Drain.
- Heat ½ tablespoon of oil in a pan and fry the sprouts.
- Heat the remaining oil in another pan and sauté the onion and carrot. Add the jackfruit and marinade. Cook for 4 minutes, stirring frequently.
- Place rice, a portion of bulgogi, and all the toppings on plates. Sprinkle with chives and sesame seeds.
