Casseroles with straw mushrooms
Looking for a quick and tasty lunch? Our chef Jarek Owczarczyk offers casseroles with straw mushrooms, which are a perfect substitute for button mushrooms. Instead of classic ketchup, season your casseroles with Thai Sriracha sauce and add a little spice to your dish.
Ingredients
- 1 can of straw mushrooms
- 50 g butter
- 2 favorite rolls
- 100 g grated mozzarella cheese
- 1 onion, diced
- 1 tomato, peeled and diced
- Salt
- Pepper
To serve:
- 3 tsp Sriracha red chili sauce
- Fresh chives or spring onions
A method of preparing
- Cut the rolls in half and spread with butter. Line a baking sheet with parchment paper and arrange the rolls on top.
- Place the straw mushrooms in a strainer, rinse under running water, then dry and cut in half.
- Heat a pan and sauté the onion and mushrooms in butter for 4-5 minutes. Add the tomatoes and sauté for another 5 minutes, or until the water from the tomatoes has evaporated. Season with salt and pepper to taste. Transfer everything to a bowl, let it cool, add the cheese, and mix. Spread the filling onto the buns.
- Bake the whole thing in an oven preheated to 180°C for about 8-10 minutes. Spread the finished casseroles with sriracha sauce and sprinkle with chives.
