Thai noodles with pumpkin and peanut butter
Try these unique, aromatic Thai rice noodles with juicy chicken, creamy pumpkin puree, and peanut butter. This dish is the perfect blend of sweet pumpkin, spicy red curry paste, and nutty butter. Simple ingredients and a quick preparation will make you love this recipe for a family lunch or dinner. Top it off with fresh cilantro, lime, and crunchy peanuts—a guaranteed flavor explosion!
Ingredients
- 0,5 kg chicken breast fillet
- 1 pack of 7mm rice noodles
- 1 tablespoon red curry paste
- 2 teaspoons finely grated ginger
- 1 small zucchini, sliced into thin half-circles
- 1 red pepper, finely diced
- 2 carrots, cut into sticks
- 4 cloves of garlic, pressed through a press
- ¼ cup peanut butter
- 3 tablespoons of coconut oil
pumpkin sauce
- ¼ cup light soy sauce
- 1 glass of water
- 0,5 cup pumpkin puree*
- 1 spoon lime juice
- 1 tablespoon fish sauce
- 3 tablespoons of brown sugar
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/2 teaspoon of salt
to be served
- Fresh coriander
- Lime wedges
- Crushed peanuts
A method of preparing
*Homemade pumpkin puree can be made by baking a halved and seeded pumpkin for about 60 minutes. Once the flesh is soft, blend it in a blender. The puree can be stored in the refrigerator for several days.
- Cook the pasta according to the instructions, drain and set aside.
- In a bowl, combine all pumpkin sauce ingredients and set aside.
- Heat one teaspoon of coconut oil in a pan. Lightly fry the chicken, being careful not to overcook it – it will continue to cook in the sauce. Transfer to a plate and set aside.
- In the same pan, heat another two tablespoons of oil, add the red curry paste, ginger, and zucchini, and sauté for 2 minutes. Then add the bell pepper and carrot and sauté for another 2 minutes. Finally, add the garlic and stir quickly.
- Add the pumpkin sauce and chicken and cook until the chicken is cooked through. Stir in the peanut butter.
- Add the pasta to the pan and quickly toss with the sauce. If it's too thick, add hot water. For a spicier dish, add Sriracha sauce. Serve garnished with cilantro, lime, and peanuts.
