Chicken satay with ginger sauce
Chicken satay is the quintessence of Thai cuisine. Ingredients
2 large chicken breasts
Marinade:
- 2 flat teaspoons red curry paste
- 3 tablespoons coconut milk 5-7%
- 1 teaspoon roasted sesame oil
- 1 teaspoon light soy sauce
- 1 large clove of garlic or 2 small cloves
- 1 teaspoon of honey
- 1 tablespoon of oil for frying
Ginger sauce:
- 10 tablespoons coconut milk 5-7%
- 1 teaspoon of oil
- 1 large clove of garlic or 2 small ones
- juice of ½ lime
- 1 piece of ginger (approx. 5cm)
- Salt, pepper
A method of preparing
- Wash the chicken breasts and cut them into long slices.
- Crush the garlic. Mix all the marinade ingredients in a bowl. Coat the chicken in the marinade and refrigerate for a few hours, preferably overnight.
- Preheat a grill pan. Thread the chicken onto skewers like an accordion. Place the chicken in the pan and sear on both sides for about 10 minutes.
- Heat the oil in a small pot. Add the minced garlic and grated ginger. Sauté for 2 minutes over low heat.
- Pour the coconut milk into a pot and squeeze in the lime juice. Simmer the sauce over low heat for about 10 minutes. Season with salt and pepper. Optionally, add chili flakes.
- Serve the fried satays with spring onions, sesame seeds and ginger sauce.
