Japanese pancake with passion fruit
Fluffy as a cloud, exotic as a vacation – Japanese passion fruit pancakes! These aren't ordinary pancakes… they're small, culinary works of art. Fluffy, light, and accented with a refreshing hint of passion fruit. Perfect for a lazy, sweet breakfast or a unique dessert.
Ingredients
- 150 g wheat flour
- 100 ml milk
- 5 egg whites
- 3 egg yolks
- 3 tablespoons of caster sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon baking powder
- pinch of salt
- frying oil
Coconut cream:
- 200 ml Coconut milk 20-22% House of Asia well chilled
- 1 tablespoon of powdered sugar
To serve:
- 100 ml Passion fruit pulp QF Quality Food
- favorite fruits
- mint leaves
A method of preparing
- Beat the egg yolks with milk and vanilla extract.
- Sift the flour with the baking powder and add it to the egg yolk mixture. Mix thoroughly.
- Beat the egg whites with a pinch of salt, then gradually add the sugar and beat until the whites are stiff.
- Gently add the beaten egg whites to the flour and yolk mixture and mix until combined.
- Heat oil in a frying pan and spoon spoonfuls of batter into the pan, forming round pancakes. When the dough has risen, flip it over and fry for a few minutes.
- Prepare the coconut cream. Strain the well-chilled coconut milk, retaining only the white flesh. Beat until stiff peaks form, adding powdered sugar.
- Serve the fried pancakes with passion fruit, coconut cream, fruit and mint.
