Vietnamese cuisine is full of Chinese cultural influences, but subtle touches ensure it doesn't fall into its shadow. The main distinguishing feature and way to achieve a Vietnamese flavor is the use of fresh spices and herbs. Cilantro, mint, lemongrass, and kaffir lime leaves are among the most popular. Interestingly, the Vietnamese often use fish sauce instead of soy sauce. Pho soup is undoubtedly the most popular Vietnamese dish. With the addition of shiitake mushrooms, it makes a filling and healthy meal. Another signature dish is Nem, or spring rolls. A meat filling, usually pork, with a variety of vegetables and tapioca noodles, wrapped in thin paper with tapioca, without soaking, makes a perfect snack. There are two versions of this dish: deep-fried or a lighter and healthier version, made without frying.
