Ingredients
Salmon:
· 1 teaspoon House of Asia Garlic, Ginger and Chili Pastes
· 2 tablespoons House of Asia sweet soy sauce
· 1 spoon House of Asia Rice Vinegar
· A large Pacific salmon fillet, cut into smaller pieces
· 1 orange (preferably organic)
Mashed potatoes:
· 6-7 medium potatoes
· 2 tablespoons of butter
· 70 ml of cream 30-36%
· A generous pinch of nutmeg
· A large pinch of pepper
A method of preparing
1. Blanch the orange with boiling water. In a bowl, combine the paste, soy sauce, vinegar, and juice of half an orange.
2. Spread the prepared sauce over the salmon (we recommend marinating it for at least 3 hours).
3. Place orange slices on top of the salmon. Bake the salmon for 20 minutes at 200 degrees Celsius. Check it occasionally and baste it with the liquid from the bottom of the pan.
4. Peel the potatoes, cut them into small pieces, and cook in salted water until tender. Pour off some of the cooking water into a bowl.
5. Mash the potatoes with a masher or press them through a ricer. Combine them with the butter, cream, nutmeg, and pepper, then blend, gradually adding the reserved water until smooth and creamy (but not runny).
