Vegetarian Peking Duck
You certainly know the recipe for Peking duck, but have you tried it in a vegetarian version? Ingredients
- 230g Peking duck sauce
- 225g bamboo shoots
- 2 tablespoons fish sauce
- 2 tablespoons light soy sauce
- 4 tablespoons rice vinegar
- 2 cans of pulled jackfruit
- 2 green, greenhouse cucumbers
- 2 shallots
- 6 cloves of garlic (4 for the pulled jackfruit and 2 for the cucumber salad)
- 1 by
- a teaspoon of chili flakes
- a piece of fresh ginger
- Oil
- challah to serve
- a bit of butter for frying the challah
- 1 teaspoon of mayonnaise
A method of preparing
- Chop a shallot and 4 cloves of garlic and sauté in a tablespoon of oil. After a few minutes, add the drained jackfruit and sauté until the edges are slightly charred and all the remaining liquid has evaporated. Once this happens, add the drained bamboo shoots.
- Meanwhile, make the sauce. Combine 5-6 tablespoons of Peking duck sauce, 2 tablespoons of fish sauce, and 2 tablespoons of rice vinegar. Pour this mixture over the jackfruit and simmer for 1-2 minutes. Set aside.
- Crush the cucumber with a pestle, then cut into irregular slices. Add the chopped garlic, chili flakes, and grated ginger. Pour 3 tablespoons of hot oil over them. Then add 2 tablespoons of soy sauce and 2 tablespoons of rice vinegar. Mix everything together.
- Slice the leek into thin strips and fry in hot oil until golden. Then drain on paper towels.
- Slice the challah and fry it in butter on both sides. Spread a little mayonnaise on the finished loaf. Top it with a generous portion of jackfruit, cucumber salad, and crunchy breadcrumbs. Top with another slice of challah.
