Warming Asian cod soup

Ingredients
Ingredients for about 2,5L of soup
· 1 House of Asia Laksa Stir-fry Pasta
· ½ pack Gluten-free rice noodles with turmeric from House of Asia
· 1 spoon House of Asia Fish Sauce
· 200 ml Light coconut milk 11% KARA
· 1 shallot, finely diced
· 1 carrot, cut into half-moons
· 1 red pepper cut into strips
· 1,5 l of vegetable broth or water
· 2 cod loins (approx. 200 g total)
· A handful of cilantro or parsley
· Oil or olive oil
· Lime for decoration
A method of preparing
1. In a pot, sauté the shallots, then add the carrots and bell peppers. Stir and add a sachet of laksa paste.
2. Mix again, pour in the broth and cook over medium heat for about 20 minutes.
3. Meanwhile, cook the pasta with turmeric in salted water.
4. Pour the shaken coconut milk into the soup pot. After a moment, add the cooked pasta, chopped raw cod, and fish sauce.
5. Mix everything and leave on low heat for another 5 minutes.
6. Sprinkle with greens and serve. Garnish with a lime slice on a plate.
TIP: You can replace the cod with pieces of chicken, add it at the same time as you add the carrots and peppers.
