Ingredients

· 1-2 tablespoons House of Asia Mirin Sauce

· 5 eggs

· ½ cup of vegetable broth

· 1 tablespoon of rice wine

· 3 tablespoons of sugar

· Vegetable oil for frying

· Salt to taste

A method of preparing

1.       Crack the eggs into a bowl and mix thoroughly with chopsticks, ensuring no foam forms (do not lift the chopsticks from the bottom). In a separate bowl, combine the broth, mirin sauce, rice wine, sugar, and salt, then add to the eggs. Gently mix until smooth and uniform.

2.       Preheat a Tamago pan and grease it with a paper towel soaked in vegetable oil. Pour 1/3 of the mixture over the entire pan, creating a thin layer (like for pancakes). When the mixture begins to set, use a wooden spoon to begin rolling the omelet. Aim for a rectangular, multi-layered roll.

3.       Without removing the first batch of mixture from the pan, pour in the next batch and repeat the rolling process until all the mixture is used up. If the Tamago is a bit loose, hold it in the pan longer and allow the eggs to set more.

4.       Cut the prepared omelette into thin strips, serve with soy sauce or as an addition to your chosen dish.
