A method of preparing

  1. Pour boiling water over the shiitake mushrooms. Set aside to swell, about 15 minutes. Drain and cut the mushrooms in half.
  2. Prepare all ingredients. Cook the pasta according to package instructions and rinse with cold water. Mix together the sauce ingredients.
  3. Heat a wok or large frying pan over high heat with 3 tablespoons of oil. Sauté the bell peppers and carrots until crispy around the edges, about 6 minutes. Remove from the pan. Let the wok cool slightly.
  4. Sauté the shallot, garlic, ginger, and chili pepper with 1/4 teaspoon of fine-grain sea salt until softened and translucent, about 5 minutes. Add the mushrooms, sautéed vegetables, and noodles. Stir and pour in the prepared sauce. Cook, stirring, for another minute or two, until everything is combined and hot. Serve with sesame seeds and cilantro.

TIP: You can play around with the vegetables however you like. In season, asparagus, broccoli, zucchini, or even radishes will work well.
