Asian Fried Rice with Shrimp in Pineapple

Ingredients
- 4 tablespoons bamboo shoots
- 2 tablespoons light soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons fish sauce
- 2 tsp garlic, ginger and chili paste
- 200 g dry jasmine rice
- 1 pineapple
- 160 g raw shelled shrimp
- 2 eggs
- 3 tablespoons of vegetable oil
- a handful of coriander
- fresh chili
- freshly ground pepper
A method of preparing
- Measure out a portion of rice and add it to boiling water, using a ratio of 1:1,3. Simmer for 10 minutes. Finally, turn off the heat and let the rice steep, covered, for 10 minutes.
- Cut the pineapple in half and scoop out the center, then cut the inside into 1 cm cubes.
- Heat the oil in a pan. Crack in the eggs and break them up with a spatula. Add 2 teaspoons of garlic, chili, and ginger paste. Fry for 1 minute. Add the shrimp, pineapple, and bamboo shoots. Fry for 2-3 minutes. Now add the rice and sauces. Mix well.
- Serve immediately, serving in pineapple halves and garnishing with coriander and chili leaves.
