Thai-style fried broad beans
Broad bean season has arrived in Poland! We have a proposition for you – a recipe for Thai-style fried broad beans with red curry pasteYou can make it as a main course or as a side dish for rice or Thai noodles.
Ingredients
- 2 tsp red curry paste (may be 1 if you like a milder taste)
- 1 spoon fish sauce
- 500 g broad beans
- 1 large onion
- 3 garlic cloves
- 1 chili pepper
- A piece of ginger, about 2 cm
- 3 tablespoons of oil for frying
A method of preparing
- Place the broad beans in boiling water for 2 minutes, drain, and set aside to cool. Meanwhile, dice the onion, slice the garlic, and finely chop the chili and ginger.
- Peel the cooled broad beans.
- In very hot oil, fry the onion, garlic, chili, and ginger for about 2 minutes, then add the curry paste and broad beans and fry for another 2 minutes.
- Then add a little water and fish sauce. Cook briefly until the liquid evaporates.
