Ingredients

1 kg of chicken wings

Marinade:

  • 4 tablespoons light soy sauce
  • 3 cloves of garlic, finely chopped
  • 1 small chili pepper, finely chopped
  • 4 tablespoons of oil
  • 1 spoon of honey
  • Grated peel of 1 lime

Sauce ingredients:

  • 4 kaffir lime leaves
  • 3 tablespoons of seeds white sesame roasted in a dry pan
  • 3 shallots, sliced ​​into feathers 
  • 2 cloves of garlic, finely chopped
  • 250 ml chicken broth 
  • 1 spoon of honey
  • 2 cm fresh ginger, finely chopped
  • 1 small chili pepper, finely chopped
  • 1 tablespoon of cornstarch
  • 1 tablespoon of butter for frying
  • Fresh chives, finely chopped, for garnish
  • Light soy sauce to taste

A method of preparing

  1. Combine the marinade ingredients in a large bowl. Place the wings in the bowl and refrigerate for at least 1 hour.
  2. Heat butter in a pan and sauté the shallot, garlic, ginger, and chili. Add the honey, pour in the broth, and add the kaffir lime leaves. Reduce the liquid by half, remove the kaffir lime leaves from the sauce, and blend until smooth. Add the cornstarch mixed with 1 tablespoon of water and bring to a boil. Add the toasted sesame seeds. Season to taste with lime zest and soy sauce.
  3. Preheat the oven to 200°C. Place the wings on a baking sheet lined with baking paper, pour a little water over them (about 100 ml), and bake for about 45 minutes. Cover the cooked wings with aluminum foil and let them rest for 15 minutes.
  4. Mix the wings with the prepared sauce and sprinkle with chives.
