Kimchi Jjigae Soup
This warming, sour-spicy kimchi soup is the perfect addition to your winter menu. If you love kimchi and always have it at home, like a true Korean, you can prepare the entire dish in just 25 minutes.
Ingredients
2-3 teaspoons House of Asia Garlic, Ginger and Chili Pastes
1 sachet Kimchi paste or 50 g Kimchi sauce House of Asia
2 tablespoons House of Asia Light Soy Sauce
2 tablespoons Gochujang paste made from Sempio chili peppers
2 cups diced kimchi
1 cup of kimchi juice
16 peeled shrimps
1,5 l of chicken or vegetable broth
50 g carrots cut into thin matchsticks
50 g white turnip, cut into thin matchsticks
1 onion, diced
Frying oil
1 bunch of green spring onions, finely chopped
A method of preparing
1. Heat the oil in a large pot, add the onion, garlic, ginger and chili paste, turnip, carrot, and fry over medium heat for 3 minutes, stirring constantly.
2. Then add kimchi, gochujang paste and kimchi paste or sauce, simmer for 2-3 minutes, pour in the kimchi juice and broth, bring to a boil, then reduce the heat and simmer for about 20 minutes.
3.Fry the shrimps in oil for one minute on each side.
4.Place the shrimp in bowls, pour in the soup, add the spring onion at the end and season with soy sauce.
