Pad Thai with crispy tofu

Ingredients
- 1 pack Rice noodles 5 mm House of Asia
- 8 tablespoons Pasty Pad Thai House of Asia
- 1 spoon House of Asia Fish Sauce
- 1 spoon House of Asia Soy Sauce
- 1 spoon White Sesame House of Asia
- 3 tablespoons of oil
- 3 cloves of garlic, finely diced
- 6 young spring onions
- 8-10 mushrooms cut into quarters
- 1 medium bell pepper cut into strips
- 2 eggs
- a handful of coriander
- 1 tofu
- 1 tablespoon sesame seeds (roasted)
- salt
- pepper
A method of preparing
- Soak rice noodles for 10 minutes in hot water.
- Slice the white part of the scallions. Sauté all the vegetables in hot oil until softened. Add soy sauce, fish sauce, and 6 tablespoons of Pad Thai paste.
- Cut the drained tofu lengthwise into two slices, then score them in a crisscross pattern, creating small squares. Season with salt and pepper. In a heated pan with a little oil, fry the tofu on both sides until golden brown. Add 2 tablespoons of Pad Thai paste and fry for another 1-2 minutes, until the tofu is well coated.
- Add the pasta to the pan with the sauce and mix thoroughly over medium heat. Transfer all the ingredients to one side of the pan and crack two eggs into the other side. Gently stir the eggs until they set slightly. Then, mix everything together.
- Divide the dish onto plates, top with tofu, and sprinkle with chopped spring onions and sesame seeds. Serve with a handful of fresh cilantro. Enjoy!
