Carotene carrot salad
Light, fresh, and ready in 10 minutes, these carotene-packed carrots delight with their simplicity and flavor. A combination of Asian spices, honey, and sesame will leave you wanting more.
Ingredients
- 2 tablespoons House of Asia Light Soy Sauce
- 1 spoon House of Asia Rice Vinegar
- 1 spoon House of Asia Sesame Oil
- 1 teaspoon House of Asia White Sesame
- 1 spoon of honey
- 1 clove of garlic, finely chopped
- about 3 cm piece of ginger, finely chopped
- 1 teaspoon chili flakes
- 4 carrots
- a handful of coriander, finely chopped
A method of preparing
- Slice the carrots into thin ribbons using a vegetable peeler or mandolin. Transfer to a bowl, lightly salt them, and set aside for 10 minutes to soften.
- Drain excess water, then add garlic, ginger, chili flakes, honey, soy sauce, rice vinegar, and sesame oil. Mix thoroughly.
- Transfer to a salad bowl, sprinkle with white sesame seeds and fresh coriander.
This salad is a great, light addition to rice or tofu dishes – full of beta-carotene and fiber.
