Cauliflower takes on a whole new dimension thanks to its combination with coconut milk, ginger, and a hint of apple. Slightly spicy and refreshing thanks to lime, served with cilantro and chives, this dish is perfect for an exotic yet delicate dinner.

Ingredients

  • 400 ml Coconut milk 12-14% House of Asia
  • 4 tablespoons House of Asia Fish Sauce
  • ½ teaspoon Holy Basil paste (contains chicken stock)
  • ½ small cauliflower, divided into florets
  • 3 cloves of garlic, sliced
  • 1 onion, sliced
  • 1,5 cm ginger root, finely chopped
  • ½ sour apple (Szara Reneta), cored, diced
  • 2 stalks of celery, finely chopped
  • 1 tablespoon of oil
  • juice of ½ lime
  • chives, cut into 1 cm pieces
  • coriander; for decoration

A method of preparing

  1. Pour oil into a pot and gently fry the garlic, ginger and onion.
  2. Add the coconut milk, fish sauce, paste, and vegetables. Stir and cook for about 7 minutes.
  3. Season the soup with lime juice, pour into bowls and garnish with chives and cilantro.
