Chow Mein Noodles with Roasted Vegetables, Feta, and Salmon

Ingredients
- 1 pack Chow Mein Noodles House of Asia
- 4 tablespoons House of Asia Teriyaki Sauce
- 3 tsp House of Asia Red Curry Paste
- 1 onion, diced
- 300 g skinless salmon, cut into several slices
- 500 g cherry tomatoes
- 2-3 cloves of garlic, peeled
- 100 g feta cheese
- 4 tablespoons of olive oil
- salt and black pepper to taste
To serve:
coriander leaves and lime
A method of preparing
- Place the feta cheese, cherry tomatoes, salmon, onion, and garlic in an ovenproof dish. Drizzle with olive oil, teriyaki sauce, add curry paste, and season with a pinch of salt and pepper.
- Preheat the oven to 200°C and bake the ingredients for about 30 minutes, until the tomatoes release their juice.
- Meanwhile, cook the pasta according to the instructions on the package.
- Mash the baked products thoroughly with a fork and mix with the cooked pasta.
If necessary, season with teriyaki sauce, salt and pepper. - Serve with coriander leaves sprinkled with lime juice.
TIP: Before mashing, remove a piece of salmon and decorate the finished dish with it.
