Marinate the salmon

  1. Start by marinating the salmon. If you have a piece with skin, you'll need to remove it.
  2. Brush the finished piece with sesame oil.
  3. Then sprinkle with coarsely ground pepper – it is very important that it is coarsely ground, not the finely ground one that we most often use in the kitchen – it is all about the aroma.
  4. Then add Shichimi Togarashi – this exceptionally aromatic, so-called Japanese 7-spice spice is an essential ingredient in this marinade – it's worth having in your cupboard.
  5. Prepare a container for marinating the salmon. It should be approximately the size of the fish so that the soy sauce you're about to pour in can best coat the salmon.
  6. Also, prepare a paper towel. Place it on top of the fish and pour in 150 ml of soy sauce.
  7. Cover with foil and refrigerate for at least 4 hours, although it is best if the salmon marinates overnight.

Why paper kitchen towel? 150 ml may not cover the entire surface of the salmon, so a wet towel helps distribute the marinade evenly over the entire surface of the fish

Salmon tartare:

  1. Remove excess pepper from the salmon.
  2. Cut it into cubes.
  3. Add finely chopped leek, sesame seeds, soy sauce, sesame oil and togarashi – mix thoroughly.

Sushi rice: Prepare the rice according to this recipe.

Folding themaki:

  1. Place a piece of nori shiny side down on your hand or cutting board.
  2. Take a spoonful of sushi rice and spread it evenly on one side of the nori, leaving a clear margin at the top and bottom.
  3. Add the ingredients to the center of the rice. Try not to overdo it so that the temaki can be rolled easily.
  4. Hold the nori in one hand and use the other hand to start rolling it up from one of the bottom corners, forming a cone.
  5. Roll it up, gently pressing the ingredients down to fill the center of the cone but not spill out.
  6. You can slightly moisten the end of the nori with water to help it stick together and keep its shape.

Important:

  1. Temaki is best served immediately after preparation so that the nori remains crispy.
  2. Serve with soy sauce, pickled ginger and wasabi.
  3. Temaki is a more casual, fun form of sushi, perfect for parties where everyone can experiment with the ingredients. Enjoy!

TIP: If you don't have Shichimi Togarashi seasoning, make your own! Mix together one teaspoon each of ginger and garlic powder, chili powder, dried lemon or orange zest, sesame seeds, and crumbled nori.
