Ribs in curry sauce

Thanks to the long baking time, the ribs are exceptionally juicy and aromatic, and served with a Thai salad, they will provide you with an unforgettable culinary experience.
Ingredients
- 400 gr rice noodles 5 mm
- 2 tablespoons sesame
- Sriracha sauce to be served
- 1,5 kg of pork ribs
- 5 tablespoons of salt-free peanuts
- A bunch of coriander, finely chopped
Marinade for ribs:
- 5 tablespoons light soy sauce
- 3 tsp chili paste
- 3 tablespoons of coconut sugar
- 3 tablespoons rice vinegar
- 5 tablespoons of ketchup
- 3 teaspoons of grated ginger
TIP: Instead of chili paste, you can use 2 finely chopped chili peppers.
Curry sauce for ribs:
- 4 tsp Massaman Curry paste
- 400 ml coconut milk 5-7%
- 1 shallot, finely chopped
- 2 cloves of garlic, finely chopped
- 2 teaspoons of grated ginger
- 100 ml of water
- Juice of 1 lime
- 1 tablespoon vegetable oil
Thai cucumber salad:
- 1 teaspoon chili paste
- 2 tablespoons coconut sugar
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 3 tablespoons sesame (Optional)
- 4 long cucumbers, sliced
- 200 g bean sprouts
- 1 teaspoon grated ginger
- 1 clove of garlic, minced
- Juice of 1 lime
- 3 tablespoons finely chopped coriander
- 3 tablespoons of roasted peanuts without salt
A method of preparing
- Separate the ribs into individual bones. In a bowl, combine all the marinade ingredients, then add the meat and thoroughly massage the marinade into the ribs. Let sit for at least 15 minutes.
- Preheat the oven to 180°C. Place the ribs, along with their marinade, in a baking bag (or two), then score the bag in several places. Transfer the mixture to a roasting pan and bake for 1 hour and 40 minutes.
- After this time, remove the ribs from the bag and place them in a roasting pan along with the sauce that formed during baking. Bake for another 40 minutes, basting occasionally with the sauce.
- Prepare the curry: Heat oil in a pan and sauté the shallot and garlic. Add the ginger, curry paste, coconut milk, and 100 ml water. Mix thoroughly, bring to a boil, add the lime juice, and then remove from the heat.
- Remove the ribs from the oven. If the sauce hasn't evaporated, remove it. Pour in the curry sauce and bake for another 40 minutes.
- Cook the pasta according to the instructions on the packaging.
- Prepare the salad: In a bowl, combine the cucumbers, sprouts, ginger, chili paste, garlic, sugar, vinegar, soy sauce, lime juice, cilantro, and peanuts. Finally, sprinkle with sesame seeds.
- Serve the ribs with pasta and salad, sprinkled with peanuts, sesame seeds, and cilantro. For an extra kick, serve with sriracha sauce.
