Tapioca pancakes
Tapioca is a small, beautiful pearl or flour made from the exotic-sounding cassava root. It's easily digestible and highly nutritious, and above all, it's cholesterol- and gluten-free. Its neutral flavor makes it a good addition to sweet toppings and is an ingredient in most Asian desserts. It can be used to make puddings, custards, fritters, and pancakes. It's also used to thicken soups and sauces. It forms the basis of bubble tea, a popular Asian drink made with tea and fruit flavorings or milk. Our chef has prepared these tapioca pancakes especially for you. You absolutely must try them.
Ingredients
- 150 ml Coconut milk 5-7% House of Asia
- 1,5 tablespoons House of Asia Fish Sauce (can be replaced with soy sauce)
- 3 tablespoons of tapioca flour
- 1/2 teaspoon baking powder
- 1/2 bunch of chives
- 3 tablespoons of oil; for frying
- 2 eggs
Spicy cherry tomatoes
- 1 spoon House of Asia Sriracha Sauce
- 15 cherry tomatoes, quartered
- 1 shallot, finely chopped
- 4 sprigs of cilantro, finely chopped
A method of preparing
1. Combine all the pancake ingredients in a bowl and mix thoroughly with a whisk.
2. Pour oil into a hot pan and fry small pancakes until golden brown.
3. Place the tomatoes in a bowl and combine them with the shallots, cilantro and sriracha sauce.
4. Serve the pancakes with spicy tomatoes.
