Celery in panko breadcrumbs
This vegan fish alternative made with celery and nori leaves is something you must try! Culinary Practice They've prepared a unique recipe enriched with aromatic spices and several serving suggestions. Try your favorite!
Ingredients
- 7 nori leaves cut into 3 strips
- 80 gr panko
- 2 celery stalks cut into 1 cm slices
- 2 teaspoons of ground linseed
- 250 ml of water
- 6 tablespoons of oil for frying
Broth:
- 15 gr miso paste
- 4 tablespoons light soy sauce
- 1 nori leaf
- 2 liters of water
- 2 bay leaves
- 3 allspice
- 6 peppercorns
A method of preparing
- Pour water into a pot, add bay leaf, allspice, peppercorns, miso paste, soy sauce, and nori leaf. Add celery slices and cook for 8-10 minutes. Remove to a plate and let cool. Reserve the broth for another dish, such as a sauce or soup with udon noodles, tofu, and vegetables.
- Moisten the nori leaves with water and place a piece of celery on the edge. Roll everything up tightly.
- On a plate, mix flaxseed and water to form a vegan egg. Pour the panko breadcrumbs onto a second plate. Coat the celery pieces wrapped in nori in the "vegan egg" and then in the panko breadcrumbs.
- Heat 2 tablespoons of oil in a pan and fry the celery until golden brown (2-2,5 minutes on each side). Transfer to a plate lined with paper towels.
- You can serve the celery on its own, with a slice of lemon, aioli sauce – mix 2 tablespoons of vegan mayonnaise with a grated garlic clove and 2 tablespoons of lemon juice, or with stewed vegetables – heat the olive oil in a pan and fry the peppers, onion, garlic and parsley.
