Ingredients

Broth:

  • 1/2 sheet Nori leaves of seaweed
  • 3 tablespoons Light soy sauce
  • 1,5l of chicken and beef broth (you can also prepare vegetable broth)
  • Oven-baked beef bones
  • 5 chicken wings
  • 2-3 cm of peeled ginger
  • 3 garlic cloves
  • 1 onion
  • 1 large carrot
  • 1/4 celery
  • 1,5L of water
  • A bunch of spring onions
  • 2 kaffir leaves
  • Salt

Accessories:

  • 2-3 tablespoons Sesame oil
  • 2 tablespoons Light soy sauce
  • 6 tablespoons Premium Tahini QF
  • package Ramen noodles
  • 1/2 sheet Nori leaves of seaweed
  • 2-3 tablespoons of roasted White sesame 
  • 200 g minced meat
  • 1/2 chopped onion
  • 2 cloves of pressed garlic
  • 1-2 cm of grated fresh ginger
  • 1 cup of soy drink
  • A few leaves of pak choi or Chinese cabbage (steam for 1-2 minutes in boiling water)
  • 2-3 tablespoons chopped chives
  • 1 tablespoon peanut butter 1 tablespoon chili oil
  • 1 tablespoon of bean paste
  • 6 soft-boiled eggs

A method of preparing

  1. Place the poultry in a pot and cover with water. Cook briefly until the scum evaporates. Then, drain the water, rinse the poultry, and return it to the pot with the roasted beef bones and remaining ingredients. Cover with cold water and simmer for 2-3 hours. Then strain the broth.
  2. Prepare the TARA: combine the tahini paste with the peanut butter and chili oil and stir until combined. Divide the prepared base among 6 bowls.
  3. Pour sesame oil into the pan and add the ground meat. Grate the ginger, add the soy sauce and bean paste, and continue frying until the meat is as crispy as possible.
  4. Combine the hot, strained broth with the soya beverage. Cook the ramen noodles according to the package instructions.
  5. Also blanch the pak choi in boiling water and place it in a bowl of cold water.
  6. Pour the seasoned soy broth over the prepared TARA. Add nori leaves, pak choi, hot and drained noodles, and blanched cabbage leaves. Place 2-3 tablespoons of ground meat in a bowl, top with a halved egg, and sprinkle with chives and sesame seeds. Enjoy!

    TIP: The day before, you can prepare an egg mixture using soy sauce, broth, and mirin and soak the eggs in it overnight.
