Duck ramen What_will_we_eat_today
An exceptionally aromatic Asian-style soup that will delight your palate! The long cooking time brings out the full, intertwining flavors of the duck and the added ingredients. This recipe was prepared in collaboration with Marcin Kozicki from the profile. @What_will_we_eat_today.
Ingredients
- 4 tablespoons light soy sauce
- 1 teaspoon of thyme
- ½ teaspoon of pepper
Broth:
- 4 shitake mushrooms
- 3 liter of water
- 2 shallots, sliced
- 2 cloves of garlic, peeled
- 1 crushed chili pepper
- 1 roasted duck
- 1 carrot, sliced
- 1 parsley root, sliced
- 1 bunch of parsley, finely chopped
- 5 cm of ginger, sliced
- 3 star anise (optional)
- Salt and pepper to taste
Accessories:
- 200 gr fresh ramen noodles
- 30 gr wakame seaweed
- 4 tablespoons dark soy sauce
- 2 eggs
- 1 pack of mung bean sprouts
- Sliced duck breasts
- 2 tablespoons of fresh coriander
Ramen base:
- 2 tablespoons sesame oil
- 2 tablespoons dark soy sauce
- 2 tablespoons miso paste
- 2 tablespoons of oil
- 2 cloves of garlic, peeled
- 1 cm ginger, diced
- ½ chili pepper
A method of preparing
- In a heated pan, mix all the ingredients for the ramen base, then reduce everything until it reaches a consistent, thick consistency.
- Wash the duck thoroughly, then pat dry with paper towels. Remove the breasts, skin on, and separate them from the bones. In a bowl, combine the soy sauce, thyme, and pepper. Add the breasts and marinate for 30 minutes.
- Heat a pan and sear the duck breasts on both sides. Preheat the oven to 220°C. Place the seared duck breasts on a baking sheet and bake for 7-8 minutes. Set aside to cool.
- Preheat the oven to 200°C. Place the remaining duck on a baking sheet with a rack and bake for 20 minutes. Then reduce the temperature to 170°C, cover the duck with a lid or aluminum foil, and bake for another 20 minutes. Once cooked, remove the duck to a platter.
- Cut the cooled duck in half. Cut the wings, neck, and body into pieces and place them in a pot.
- Pour water into the pot with the meat and add the remaining broth ingredients. Simmer over low heat for at least 3-4 hours. Finally, add the previously prepared ramen base. Strain the mixture through a sieve.
- Prepare the noodles and wakame seaweed according to the instructions on the package.
- Soft-boil the eggs. Then peel them and soak them in soy sauce.
- Place the ramen noodles in a deep bowl and pour boiling broth over them. Add the roasted duck breasts, halved eggs, wakame seaweed, mung bean sprouts, shitake mushrooms from the broth, and cilantro.
