Asian noodles with snow fungus
A classic Asian street food, these stir-fried noodles with snow mushrooms, vegetables, and chicken impress with their simplicity and depth of flavor.
Ingredients
- 160 gr Gluten-Free Mung Bean Vermicelli Noodles from House of Asia
- 5 tablespoons House of Asia Light Soy Sauce
- 3 tsp House of Asia Garlic Pastes or 3-4 cloves of garlic, finely chopped
- 15 gr Snow Fungus House of Asia
- 200 g chicken drumstick meat
- 100 g pak choi or Chinese cabbage, cut into strips
- 1 carrot, cut into sticks
- 3 eggs
- 1 tablespoon of potato flour
- 2 tablespoons chopped spring onions
- Frying oil
- Black pepper to taste
A method of preparing
- Marinate the chicken in 2 tablespoons of soy sauce, beaten egg, and potato starch. Set aside for 10-15 minutes. Then fry in a pan until golden brown.
- Prepare the pasta according to the package instructions, then rinse under cold water and cut into smaller pieces with scissors. Prepare the mushrooms according to the package instructions and allow to cool. Then, trim off the woody ends.
- Pour oil into a frying pan, fry 2 beaten eggs until well set, stirring constantly, and transfer to a bowl. In the same pan, add oil and sauté the garlic paste, cabbage, and carrots. Then add the prepared chicken, sliced mushrooms, eggs, and noodles. Season with pepper and the remaining soy sauce, and mix well. Sprinkle with scallions when finished.
For a gluten-free version, use gluten-free soy sauce.
