Snow Fungus Stir-Fry Pasta
Stir-frying is a method of preparing meals typical of Asian cuisine. Brief frying combined with constant stirring allows for the flavor of individual ingredients to be preserved. Edyta Dyduch, who proposed her version of stir-fry, with the addition of aromatic mushrooms. Warning – this dish is addictive!
Ingredients
- 400 gr fresh udon noodles
- 25 gr mun mushrooms
- 15 gr snow fungus
- ½ teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 spoon lime juice
- 2 tsp Hoisin sauce
- ½ teaspoon chili paste
- 1 spoon sesame oil
- 50 gr Cantonese paste
- 2 tablespoons soy sauce
- 4 Kaffir lime leaves
- 565 g green jackfruit in pieces
- 2 carrots cut into thin strips
- 1 red onion, finely diced
- 1 spring onion
- 1 chili pepper
- 1 avocado, peeled and diced
- 2 tablespoons of cashew nuts
- 2 tablespoons fresh, chopped cilantro
- 2 tablespoons of Thai basil
- salt to taste
A method of preparing
- Pour the jackfruit into a strainer and rinse thoroughly with water. Then dice it. Add the ginger, garlic, and chili pastes, hoisin sauce, and a pinch of salt.
- Pour hot water over the mun and snow fungus.
- Heat sesame oil in a wok. Add the jackfruit, onion, and carrots. Sauté until the vegetables are soft.
- Add the Cantonese paste, lime juice, drained mushrooms, kaffir lime leaves, soy sauce, and noodles. Sauté briefly. Finally, add the avocado.
- Serve the dish sprinkled with fresh coriander, chili pepper, spring onion, Thai basil and nuts.
